Introduction
In
many occasions, one may think some people are experts in hospitality through preparing
deserts and other snacks only to realize, they had just acquired from a firm or
imported from abroad. May be that could be the case because Bikaner the city
where the name and production of Bikaneri Bhujia emanated has profiled the
snack name for itself in massive production of these snacks.
Bikaneri
Bhujia is a light yellow snack which has a savoury taste usually prepared from
Besan (Gram flour) although it can be prepared from Moong, Moth beansed potato
and flavoured with variety of spices but commonly is the black pepper. Moth
beans (Vigna Aconitifolia)
is a type of beans which is grinded into a fine flour. Once it is prepared, it
can be stored in air-tight containers.
How to prepare Bikaneri Bhujia
In
order to prepare a standard Bhujia, one is required to have the following
ingredients; a half cup of Moth beans flour, a half teaspoon freshly ground
black paper, a quarter teaspoon cardamom powder, a quarter teaspoon
hing(asafoetida), salt to taste and enough oil for deep frying.
Procedure
Once you have had all
ingredients ready, in a clean deep bowl mix the flour, pepper, cardamom powder
and salt with enough water to make a soft dough. Depending on your wish, shape
the dough into a cylindrical rolls of your size
As the oil boils, fill the
Sev Press Machine with the dough where you will press them out in thin strands into
the boiling hot oil. Deep-fry your Bhujia in a medium flame for about 8-10
minutes until they turn into light brown.
Drain any extra oil in the Bhujia either in an
absorbent paper and allow them to cool before packaging. Once they have cooled,
you may reduce their sizes by crushing them with your fingers.
Bikaneri Bhujia can be
taken the same way as crisps together with cold drink.

Benefits of consuming Bikaneri
Bhujia
Trans Fat Free
With the demands from the Industrial Courts to publicise their
nutritional contents on the packages, things have taken a different
direction. Misleading information has
become a history now. Ingredients like fats for every 100 grams of every Bhujia
should be zero in their products according to the new regulations. Initially,
0.9 grams Trans fats in 100 grams was the common case but those who gave such
misleading information to their consumers had their production license
withdrawn.
Standardized ingredients measurements
Junk foods for instance have a nutritional information of 14 grams protein
in every 100 grams on upon packaging. National Institute of Nutrition through
its experts has made a reasonable nutritional regulations which bar any
producer to have more than what they have quoted for in any product. Without
these nutritional information, many of the producers could take this as an
opportunity to exploit the consumer, but hey they are not lucky!!
Every consumer is entitled of
genuine information of how many calories he or she consumes.
Zero-Sugar
With the awakening of Nutrition and other consumer related agencies
which are more concerned with the general public health, fat-salt-sugar-problem
is what they are up to so as to ensure no producer will take any consumer for a
ride. This is evident in Ireland, Mexico, United Arab Emirates, US and Canadian
states who have banned junk foods because they are believed to contain excess
of the aforementioned.
In the recent past, Denmark
and Hungary have had “fat tax” which is aimed on discouraging its production.
Again also, if snacks such as butter, milk, cheese, pizza, meat, bacon,
ice-cream or any other Namkeen processed food is found to contain more than 2.3
per cent fat is dumped and the producer charged in a court of law.
Bikaneri Bhujia is now as delicious, sweet and safe as the so
believed “Heaven” and nothing to fear when consuming. Why can’t you give it a
try and be a living testimony!
